5 dinners to make this week - from Aldi


Zuppa Toscana with homemade breadsticks - Everyone loves a good copycat Olive Garden night around here!



Banh Mi (inspired) bowls over rice - https://www.spoonfulofflavor.com/banh-mi-rice-bowl/ This was SO GOOD! We used the leftovers to make Banh Mi sandwiches for lunch the next day!


Chicken, broccoli & noodle casserole - https://www.saltandlavender.com/chicken-noodle-casserole/


Spaghetti & meatballs -


Meatballs - I don't have measurements for this! I combine ground beef & pork (and ideally

veal too but they didn't have any), breadcrumbs, 1 egg, chopped onion, chopped parsley,

parmesan cheese, salt & pepper. Mix with hands. Scoop using cookie scoop and bake at 350

for about 10 min. Drop into the sauce to finish cooking.

Sauce - I saute garlic & onion in olive oil. Then add can of tomato paste. Deglaze with red

wine, scraping up all of the yummy bits on the bottom. Add in 3 cans of crushed tomatoes

and I use half can of water for each full can. Season generously with salt & pepper and let

simmer with meatballs for as long as possible.

Toss cooked spaghetti with sauce & you've got the best dinner ever.


Chicken chimichangas with homemade chips, guac & pico de gallo


Homemade chips - Cut corn tortillas into 6 triangles. Heat vegetable oil to 350 and fry the

tortillas until brown - then salt!

Guac - (my version). In my mini prep, I put 1 quartered roma tomato, half an onion and

cilantro. I process in pulses until chopped. In bowl, add 3-4 avocados along with the tomato

mixture. Generously season with salt & add juice of 1 lime. Mash gently with fork (we like

chunky!)

Pico - (my version). Chop 1 onion, 4-5 roma tomatoes and 1 bunch of cilantro. Season with

salt & lime juice and mix. Tastes best after at least an hour in the fridge!
