Sheet pan sausage & veggies over harvest grains - You can really use any combo of veggies here! I cube sweet potato, halve brussels sprouts, slice chicken sausage & chop red onions. Add to baking sheet(s) and toss with olive oil, salt and pepper. Bake at 375 for about 30 min. Serve over harvest grains (prepared according to package using chicken broth) and you can use some maple mustard sauce to drizzle on top (whole grain mustard + maple syrup).
Thai curry chicken and veggies over rice - Cube chicken, season with s&p and saute in olive oil. Add in 2 packages of stir fry veggies, 2 bottles of curry sauce and 1 can of coconut milk. Warm through and serve over white rice.
